Day 3: Vindaloo!

Well, I ate healthy stuff today. But I forgot to eat lunch. I got busy cleaning and folding laundry and forgot to stop for lunch. I realized I skipped lunch around 2:30 PM. I grabbed a banana and big glass of water and sat down. So here’s what I had today:

Breakfast:
* 1 egg, 1/2 avocado on an Ezekial English muffin
* Fruit salad made of jicama, apples, carrots, orange and lemon juices, cinnamon and cayenne
pepper
* 2 cups coffee with Truvia™ and almond milk

Mid-afternoon snack:
* Banana
* 32 oz. glass of water

While I made dinner:
* some Naan bread with roasted red pepper hummus

Dinner:
* Chicken vindaloo over jasmine rice, mixed vegetables
* 32 oz. glass of water

This was my first time making vindaloo. Have you ever had it? I found a recipe and modified it slightly because my guys don’t handle that much curry too well. I decided I may have to make this dish often just because I like to say vindaloo. Try it. It’s fun. I’ve wondered what chicken vindaloo was since I was in high school. I used to watch this really funny British show called “Red Dwarf”. David Lister ate it all the time. Seems I remember one episode where his vindaloo attacked him…

Skipping a meal is bad news bears, I know. I didn’t mean to do it. It just happens when your Sunday is your Saturday and Sunday rolled into one stupid package of “must-do” stuff instead of spending time with my family or training.

Oh, that’s another thing. I should have run today. It didn’t happen. I just ran out of time. I’m going to try to fit it in sometime tomorrow.
